My best friend who was my class mate, quit school to start Steakhouse Carnal from scratch. From the beginning I have been by his side during signing of contracts up to the renovation and negotiations with the suppliers and banks.
Besides my studies, I run Steakhouse Carnal on a day to day basis. I hire personnel, plan the big events, control the quality of the F&B as well as the HACCP. Also I am working operational three to four days a week, I am in charge of the service and public relations.

Food and Beverage, Management Traineeship

The Peninsula Beijing

From 19th May to 14th of June / 5th August to 2nd of September I have been employed by The Peninsula Beijing for eight weeks as a Management Trainee in the F&B Department. My job was to familiarise myself with the different outlets and assist the F&B Director with the day to day operations and planning. Also I have assisted the Learning and Development department with English language training for staff.

Waiter/ Team Leader

Working as a waiter at the prestigious Paddock Club, Formula 1. My job was to travel around the world to the different Grand Prix and maintain a high standard of exclusive service for the guests during the races. Working for Do&Co was my introduction to high level service overall. Working long hours and constant team meetings was my daily routine.

After working at two different Grand Prix, Germany and Abu Dhabi, I was appointed Team Leader. This meant that I had the responsibility over maximum eight waiters. This made my motivation rise sky high. 

Besides working at Formula 1 events I have also worked at the exclusive Equestrian Sports Event Called CHIO, and many more events.

All Around Internship

A mandatory three internships is incorporated in my Hotel Management Schools' degree. This was my first internship where my aim was to learn as much as possible about the entire hotel and not only one department. 

I have worked at the Front Office, Rooms Department, Housekeeping, and in the F&B department, kitchen and service. Griff Hotel is a relative small, forty-two rooms hotel. Big enough for me to get an impression of how a hotel operates.

Logistic Planning Hospitality

Service Royal is an organisation similar to Black Tie Services. My boss and owner of the company had a large database of waiters. After receiving orders from a third party my boss would start the logistic planning. The available waiters needed to be called in. Cars needed to be arranged for the trip to the location where work needs to be done. Waiters needed to be brought back home et cetera. A large amount of work went in to the planning of such an event. After working a couple of months as a waiter at this company I quickly got the hang of it and started helping my boss out with the logistic planning. Being younger then my boss and having a better relationship with the waiters we worked with, better results started showing during my time of logistic planner.

My first job in the hospitality industry was at a small Italian speciality restaurant. I developed a taste for good food and a passion for working with and for people. I started off as a waiter, learning everything from scratch and quickly worked my way up to bartender. After more then a year at the same restaurant I wanted to work elsewhere. The possibilities were limited due to my young age. I decided to remain working at Da Constantino and have a go at the kitchen to learn everything I could regarding food preparation, planning and waste management.
